Caucasian cuisine has always been famous for unusual recipes of dishes, including various jams. The creativity of Azerbaijanis allows the world to get acquainted with recipes from pumpkin, tomatoes, eggplant and peel from watermelons. One of the most famous desserts in Azerbaijan is jam from yellow (white) pitted cherries with walnuts. Selection and preparation of ingredients
It is recommended to choose walnuts from a new crop, as there is a possibility that old ones will be bitter. The prepared amount of walnut kernels must be placed in boiling water for 20 minutes, after which the procedure of peeling the nuts can be carried out (you can also buy kernels that have already been peeled).
When choosing a yellow (white) cherry, you should pay attention to the fruit to be ripe and juicy. They should be thoroughly washed and sorted, removing the stem, remove garbage and spoiled fruits.
Important! It is not permissible to cook jam in an enameled pan, on which there is damage. This can lead to product spoilage.

- The washed cherry fruit must be disposed of. Removal technology can be performed either manually or using a mechanical pitting machine. If removal is carried out in the first way, then it is necessary to perform the procedure with extreme caution so as not to damage the fetus. All peeled fruits should be placed in a bowl, and the juice from the berries should be poured into another container, as it will still be needed.
- Ready walnut kernels, which were already peeled during preparation, can be fried. Using this procedure, the nuts will be dried, and also, as a result of heat treatment, the kernels will get a pleasant fried aftertaste. The step in question is optional, so if you don’t have enough time, you can skip it.
- Nuts must be crushed to such a size that their diameter does not exceed the size of the cherry (ideally, the kernels of the nuts should equal the parameters of the kernel fruit of the cherry).
- Harvested slices of nuts should be placed inside the berries of yellow cherries. This procedure must be performed with each sweet cherry. The execution technology can be seen in the photo.
- Berries should be placed in a cooking bowl. It can be a pan or a basin. Cherry is filled with sugar and the juice obtained earlier from berries or 1.5 cups of water is added there. You can also add 2-3 grams of citric acid (half a teaspoon) or half a lemon, which will add a pleasant sourness. Sweet cherry filled with sugar should be a little infused - 1-1.5 hours.
- Next, you need to put the future jam on the stove and cook on low heat until the sugar is completely dissolved. After boiling, it is necessary to add jam for another 2-3 minutes and turn it off. In this condition, it should stand for 5-6 hours.
- Then re-boil the jam, and then repeat again. The total number of boils should be three. The cooking process must be on a small fire so that the jam does not burn and as a result does not give bitterness. During each boil, remove the foam.
- The final stage is the sterilization of cans and seaming. One of the convenient ways is the sterilization of cans in the microwave. To do this, place the jar in the microwave and sterilize for 5 minutes with a minimum temperature. Then you need to pour the jam into jars and close the lids (boiled in water).
Storage Features
If the jam is not immediately served to the table, then it must be stored in the right place. Ideally, such a workpiece should be stored on the bottom shelf of the refrigerator, but if this is not possible, then a pantry or any dark place where the temperature will not exceed 20 ° C is perfect. It is not recommended to store the product in the cellar, as it can freeze and as a result deteriorate.
